Confocal Raman microscopy is a powerful tool for analysing of the chemical composition of heterogeneous samples on the sub-micrometre scale. In this application note, the distribution of various chemical compounds in a banana, instant gravy thickener, emulsions, confectionery and chocolate products are visualised, thus leading to a more comprehensive understanding of the product and production processes.
